6 Tbsp margarine or butter, softened
½ cup packed light brown sugar
1/3 cup granulated sugar
2 large egg whites
1 tsp vanilla extract
1 1/3 cups all-purpose flour
1 tsp baking soda
2 cups popped Newman's Own® Butter, Light Butter, or Butter Boom Flavored Microwave Popcorn chopped in food processor
1 cup semisweet chocolate chips
1 jar macadamia nuts, chopped (optional)
½ cup quick-cooking oats, uncooked
½ cup toffee bits
Preheat oven to 375°F. In a large bowl, with mixer at high speed, beat margarine or butter and sugars until light and creamy. Add egg whites and vanilla; beat until smooth. Add flour and baking soda; beat on low speed just until blended.
Stir in popcorn, chocolate chips, macadamia nuts, oats and toffee bits. Drop by rounded tablespoon onto ungreased cookie sheet. Bake 12-15 minutes until lightly browned.
Transfer to wire rack to cool.
