4 boneless chicken breasts, cubed
3 diced tomatoes (preferably tomatoes-on-the-vine)
1 pound penne pasta
1 Tbsp olive oil
1/2 - 1 cup of Newman's Own® Balsamic or Lite Balsamic Dressing
1/2 cup Parmesan, grated
1/2 cup pine nuts, toasted
Prepare pasta according to package. Dice tomatoes and put aside.
Cut chicken breasts into cubes and cook in oil until no longer pink.
In a small pan toast pine nuts a few minutes until light brown. When penne pasta is ready, place in bowl with tomatoes and chicken. Toss with salad dressing until coated.
Sprinkle with Parmesan cheese and toasted pine nuts. Serve and enjoy.
