3 cups cooked wild rice (1 cup uncooked)
1 ½ cups cubed cooked chicken
1 cup cooked peas
½ cup pitted ripe olives, sliced
½ cup chopped red pepper
¼ cup chopped green onion
½ cup Newman's Own® Caesar or Lite Caesar Salad Dressing
12 large shelled and deveined cooked shrimp, tails intact
2 medium tomatoes, each cut into 6 wedges
Place cooked wild rice in a mixing bowl. Fold in chicken (cooked and cubed), peas, olives, red pepper and green onion. Add salad dressing and chill for 1 hour.
To serve, line 4 salad plates or bowls with lettuce leaves. Top lettuce leaves with a mound of rice salad. Garnish each serving with 3 shrimp and 2 tomato wedges.
