1 package fresh or no-cook lasagna noodles
3 small potatoes, sliced into ½ -inch thick rounds
1 jar Newman’s Own® Alfredo Sauce
1 ½ cup Asiago cheese, grated
1 cup Parmesan cheese, grated
3 cups spinach, washed
1 cup green beans or asparagus
Any other veggies you have on hand
Salt and pepper
Preheat oven to 375. Place sliced potatoes in a steamer over water and begin steaming. If you have any other veggies that need steaming (green beans or asparagus) add them to the potatoes after 10 minutes. Steam for 20 minutes total, remove from heat and set aside.
In an 8x8 baking pan, spoon 2 Tbsp Alfredo sauce evenly over the bottom. Add 1 layer of noodles to cover the sauce, then ¼ of the remaining sauce. Place steamed potatoes over the top of the sauce in a single layer, then sprinkle with salt and pepper. Add desired veggies and spinach. Sprinkle with ½ cup Asiago cheese.
Add another layer of noodles and repeat above pattern (sauce, potatoes, veggies, cheese), ending with noodles and another layer of sauce. Sprinkle the top with Parmesan cheese.
Bake until the top is golden brown.
