1 pound ground veal
1 clove garlic, chopped
¾ cup low fat ricotta cheese
¼ cup grated parmesan cheese
¼ cup chopped fresh parsley
½ cup Newman's Own® Lite Sun Dried Tomato Dressing
½ cup plain bread crumbs
¼ cup chopped scallions
salt and pepper to taste
Preheat oven to 400 degrees. In a stainless steel bowl, combine all ingredients together, keep the mixture well chilled.
Dip hands into cold water and make meatballs to desired size. Golf ball size works the best.
Place meatballs on cooking sheet and bake at 400 degrees for 20 minutes.
Serve hot with extra salad dressing on the side for dipping.
