1/2 cup Newman's Own® Lighten Up! Low Fat Sesame Ginger Dressing
1 Tbsp fish sauce
Tbsp fresh squeezed lime juice
1 Serrano chile, stemmed and chopped
2 garlic cloves, coarsely chopped
1/4 cup fresh cilantro, some reserved for garnish
1/3 cup fresh basil
1/3 cup fresh mint
4 skinless boneless chicken breast halves, preferably organic, cut into long strips
1/2 cup Newman's Own® low-fat Sesame Ginger dressing
2 Tbsp soy sauce
1 Tbsp lime juice
Set barbecue to medium-high heat. If using bamboo skewers soak in water for at least 30 minutes.
Combine all marinade ingredients in a blender and pulse until well blended. Pour marinade over chicken and refrigerate at least 1 hour, more if possible.
Thread chicken onto metal or bamboo skewers. Sprinkle lightly with salt and pepper. Grill chicken until cooked through and slightly charred, about 6-8 minutes. Sprinkle with reserved cilantro.
