1 cup basmati rice
2-1/2 cup low salt chicken broth
1 Tbsp extra virgin olive oil
1 grilled chicken breast, cut into small strips
1 can black beans, rinsed
1 jalapeño, seeded and diced
1/3 cup cilantro, chopped
2 scallions, sliced into 1/4 inch rings
2 tsp limejuice
Freshly ground pepper, to taste
Hot sauce, to taste
1/2 jar of Newman's Own® All-Natural Bandito Salsa Tequila Lime
Bring broth and olive oil to a boil. Add brown rice and reduce the heat to low. Cook rice until water has been absorbed, approximately 25 minutes. Let rice sit 5 minutes.
Combine beans, jalapeño, scallions, lime juice and pepper with rice. Serve immediately with hot sauce.
