1 bag fresh spinach
2 chicken breasts, sliced
1 bottle Newman’s Own® Light Balsamic Vinaigrette Salad Dressing
1 pint container cherry tomatoes
1 small can pineapple bits, drained
1 Tbsp sesame seeds
1/2 lemon, juiced
1/4 cup dried cranberries
1/4 cup walnuts, chopped
Shaved Fontina cheese
Spray a grill pan with cooking spray and heat over medium heat. When hot, add the chicken and cook until done.
In a large bowl add the spinach leaves and drizzle with the salad dressing. Add in the cranberries, walnuts, pineapple and cherry tomatoes. Toss to combine.
Sprinkle with the sesame seeds and lemon juice, tossing again.
Divide salad onto individual serving plates and top with chicken slices and shaved Fontina cheese.
