3 sweet potatoes, peeled and sliced into ½-inch sticks
2 cups canola oil
½ cup plain yogurt
¼ cup Newman’s Own® Light Honey Mustard Dressing
1 tsp curry powder
Salt and pepper
Heat oil in heavy-bottom pan until bubbles form when spoon is dipped in. Add potato sticks in small batches and cook until browned, about 6-8 minutes. Flip them over frequently so they cook evenly.
Remove fries from oil and drain on paper towels. Sprinkle with salt while still hot.
In a small bowl, stir together the yogurt, dressing and curry powder. Season with salt and pepper. Serve alongside fries.
