2 pounds skinless boneless chicken breasts
1 bottle Newman's Own® Family Recipe Italian Dressing
3 Tbsp mustard
1 tsp red pepper
1 tsp cracked black pepper
1 small jalapeño chopped
1 bag romaine salad
1 cup shredded carrots
3 mushrooms washed and sliced
1/2 of a cucumber sliced thin
1 red bell pepper chopped
1 green bell pepper chopped
1 avocado sliced
Remove all fat from chicken and place in a one gallon Ziploc bag. In a bowl, mix 3 cups salad dressing, mustard, red pepper, cracked black pepper, and jalapeño. Pour the marinade into the bag with the chicken. Marinate 2 hours or more.
Grill chicken until juices run white, pouring the remaining marinade over chicken as it cooks. Rest chicken 10-15 minutes and slice into strips.
Mix romaine lettuce in a large bowl with remaining vegetables and toss. Add salad dressing to taste and top with grilled chicken.
