1 cup onion, chopped
2 tsp unsalted butter
1-1/2 pounds lean ground beef or ground turkey
1 16-oz. jar Newman's Own® All-Natural Bandito Chunky Salsa
1 jar salsa con queso
1 cup jasmine rice
1 can chicken broth or 1 3/4 cups water
taco shells, broken
shredded smoked cheddar or gouda cheese
Preheat the oven to 350°F.
In a medium saucepan, cook the rice in the chicken broth or water.
In a 12-inch skillet, sauté the chopped onion in the butter. Add the ground beef or ground turkey and brown. Drain off fat, if needed. Add the salsa and the salsa con queso. Mix well.
Place the rice in a large oven-safe casserole dish. Pour the ground beef or turkey mixture on top. Spread the broken tacos over the ground beef or turkey mixture and sprinkle the shredded cheese on top of the broken tacos. Bake for 15 to 20 minutes or until the cheese is bubbly.
