8 bamboo skewers, soaked in water
24 large shrimp (about 1 lb.) shelled and deveined
1 ripe mango, peeled and cut into 1' pieces
4 green onions, cut into 1 ½ inch pieces
1/3 cup Newman's Own® Family Recipe Italian Dressing
1 jar Newman's Own® Pineapple Salsa
2 Tbsp dark rum
3 cups hot cooked rice
On skewers, alternately thread shrimp, mango and green onions. Place skewers in a 13'x 9' glass baking dish and pour salad dressing and pineapple salsa over them, coating evenly. Marinate for 15 minutes at room temperature.
Preheat broiler. Place skewers on rack in broiler pan. With broiler pan at closest position to source of heat, broil the skewers for about 4 minutes per side, or just until shrimp turn opaque.
Remove skewers to plate; keep warm. Pour salsa marinade into a 2-quart saucepan and heat to boiling over high heat. Boil marinade 3 minutes. Add rum to cooked salsa and boil 1 minute.
To serve, place 2 skewers of shrimp over rice on plate, then top with some of the cooked salsa mixture.
