2 cups wild rice
1 cup scallions, chopped with green parts
1 cup fresh mushrooms, chopped
1 cup red bell pepper, diced
1 cup spinach, shredded
1 cup raisins
1 cup Newman's Own® Lighten Up! Low Fat Sesame Ginger Dressing
2 Tbsp sesame seeds
Cook wild rice according to package directions. Place rice in a large mixing bowl. Add scallions, mushrooms, pepper, spinach, and raisins. Mix well.
Pour dressing over salad, sprinkle with sesame seeds, and toss to coat. Place in the refrigerator to marinate 30 minutes prior to serving.
