2 medium avocados, peeled, pitted and diced
1/2 cup seeded, diced peeled cucumber
1/2 cup red onion, finely chopped
1/2 cup seeded red bell pepper, finely chopped
1/2 cup peeled carrot, shredded
2 Tbsp pickled ginger, finely chopped
4 Tbsp fresh lime juice, divided use
1/2 cup Newman's Own® Lite Low Fat Sesame Ginger Salad Dressing
2-1/2 tsp wasabi powder
1-1/2 Tbsp vegetable oil
4 6-to-7 ounce pieces salmon fillet
1 Tbsp toasted sesame seeds
Salt and pepper, to taste
In a medium bowl combine avocados, cucumber, onion, pepper, carrot, and ginger. Add 3 tablespoons of lime juice; toss to combine. Season with salt and pepper to taste. Set aside.
In a small bowl whisk together the salad dressing, wasabi powder, and remaining lime juice; set aside.
In a large non-stick skillet, heat oil over moderately high heat until hot but not smoking and cook salmon 4 to 5 minutes on each side, or until golden. Transfer salmon to 4 plates. Add dressing mixture to skillet and simmer, stirring, 1 minute.
Spoon glaze over salmon and sprinkle with sesame seeds. Serve salmon with salsa.
