1 pork tenderloin
1 1/2 cups Newman's Own® Lite Low Fat Sesame Ginger Dressing
1 cup dried cranberries
canola Oil for pan searing
Place pork in a gallon zip lock bag and marinate pork tenderloin in 3/4 cup of salad dressing for two hours in refrigerator.
Preheat oven to 400 degrees. Pan-sear all sides of pork tenderloin until brown in a saucepan with canola oil over high heat, about 10 minutes.
Place tenderloin in casserole dish, pour addition 3/4 cup of dressing over and around pork. Sprinkle 1 cup dried cranberries around pork. Cover tightly with aluminum foil and cook for 30 minutes.
Slice pork into medallions and spoon sauce with cranberries over the medallions. Serve while hot.
