1 bar Newman's Own® Organics Sweet Dark Chocolate with Orange Oil
1 can black beans
¼ cup peanut butter
1 jar Newman's Own® Hot Salsa
4 cups hot cooked rice
2/3 cup plain yogurt
1/3 cup light cream
¼ cup loosely packed orange peel curls (each curl about 1')
¼ cup chopped fresh cilantro leaves
With burner low, melt chocolate in top of double broiler or in a medium saucepan. Remove from heat and set aside.
Drain and rinse black beans. Place beans and peanut butter in food processor and blend. Transfer bean puree to pan with melted chocolate. Stir.
Set aside ½ cup salsa. Then add rest of salsa from jar to bean mixture in saucepan. Mix well and heat through.
In a separate bowl, mix yogurt and light cream. Set aside. Divide rice in four and place on dinner plates. Top rice with salsa/bean sauce. Drizzle with reserved salsa and yogurt/cream blend. Sprinkle with orange peel curls and cilantro.
