1 pound sweet Italian sausage, casings removed and crumbled
1 clove garlic, peeled and crushed in a garlic press
1 can (16 oz.) peeled tomatoes
2 cups Newman's Own® Salsa (Mild, Medium or Hot)
1 pound penne pasta
1 ½ cups mozzarella cheese, shredded or a combination of mozzarella and cheddar
½ cup chopped fresh basil (optional)
grated parmesan cheese (optional)
In a nonstick skillet over medium-high heat, cook the sausage, stirring frequently, until lightly browned, about 10 minutes. Add garlic and cook for 1 minute.
Bring a large pot of salted water to a boil over high heat. Add the penne, bring water back to a boil and stir. Boil according to the manufacturer's directions. When the pasta is done, drain immediately in a colander. Pasta should be al dente or firm.
In a large bowl, toss the penne with the sauce, mozzarella cheese, and basil. Spoon into serving bowls and sprinkle with parmesan cheese.
