1 pound assorted mushrooms, sliced
1 onion, sliced
3 Tbsp extra virgin olive oil
1 tsp thyme
salt and pepper
1-2 packages no-boil lasagna noodles
2 jars Newman’s Own® Alfredo Sauce
3 cups mozzarella cheese, shredded
1 cup Parmesan cheese
½ cup water or mushroom stock
Preheat oven to 350. In olive oil over medium heat, sauté mushrooms and onion until tender. Add thyme, salt and pepper. Set aside.
In a 10 x 15-inch pan, spread 2 Tbsp Alfredo sauce. Cover with a layer of noodles and another layer of Alfredo sauce, then mushrooms and cheeses.
Add another layer of noodles and continue this pattern until the dish is full. Finish with a layer of cheese.
Add water and cover with foil. Bake for 25 minutes, then uncover and cook for 15 minutes more.
Let sit for 15 minutes before serving.
