1/3 cup chopped onion
4 Tbsp butter
A large handful of chopped mint leaves
1 pound shelled peas, fresh or frozen
½ cup Newman's Own® Old-Fashioned Roadside Virgin Lemonade
1 ½ cups chicken bouillon
1/3 cup light cream
salt and pepper
mint leaves for garnish
In a medium size covered saucepan, sauté the onions in the butter until limp. Add mint leaves, peas, lemonade and bouillon and bring to a boil. Lower heat and simmer, covered, until peas are tender, about 12-15 minutes.
Allow to cool slightly and puree until very smooth. Add cream and salt and pepper to taste.
Garnish with mint leaves. Serve hot or cold.
