2 pounds ground beef
1 onion, chopped
1 garlic clove, minced
2 Tbsp olive oil
1 jar Newman's Own® All-Natural Bandito Salsa
1 package frozen chopped spinach, thawed
1 cup tomato sauce
2 medium tomatoes, chopped
1 large red pepper, chopped
2 Tbsp lime juice
1 tsp salt
12 corn tortillas
1 cup sour cream
¾ cup shredded cheddar cheese
¾ cup shredded Monterey Jack cheese
½ cup sliced black olives
Preheat oven to 350 degrees. In large skillet, add olive oil and brown meat until halfway cooked. Add onions and garlic and continue to cook until brown. Add salsa, spinach, tomato sauce, tomatoes, pepper, lime juice, and salt.
Layer 6 tortillas along the bottom of a greased lasagna pan. Add half of meat sauce. Layer the 6 remaining tortillas. Spread sour cream over lasagna. Add remaining meat sauce.
Bake 30 minutes - until sauce is bubbling. Sprinkle on cheese and let stand about 10 minutes until cheese has melted. Garnish with olives and more salsa.
