4 chicken breasts
Newman’s Own® Mesquite with Lime Marinade
3 assorted peppers (preferably red, orange, and yellow)
1 medium-sized onion
Salt and pepper, to taste
Rinse and trim chicken breasts and place in glass pan; pour a generous amount of marinade over the chicken. Cover pan and place in refrigerator for at least 1 hour (better yet, do this step in the morning and leave in the fridge all day).
Before placing chicken on grill, slice onion and peppers and sauté in pan with olive oil; add salt and pepper. Grill chicken and cut into slices.
Mix with onion and pepper mixture and serve on a bed of rice. Squirt fresh lime juice on top.
