Taking a cue from the farmer’s market with the fresh vegetables in this dish.

We’ve taken garden favorites like cucumbers and tomatoes with Newman’s Own Garlic Vinaigrette and Marinade for a simple, flavorful dish that evokes all the feelings of a summery Mediterranean holiday.

Ingredients

  1. 2 cups cooked orzo
  2. 2 mini cucumbers, thinly sliced
  3. 3/4 cup cherry tomatoes, each quartered
  4. 1/2 cup canned chickpeas, drained and rinsed
  5. 1/2 cup arugula
  6. 1/4 cup pitted Kalamata & green olives, each cut in half
  7. 1/4 cup crumbled feta cheese
  8. 1/3 cup Newman’s Own Garlic Vinaigrette & Marinade

Directions

In a large bowl combine orzo, cucumbers, tomatoes, chickpeas arugula, olives and feta cheese. Toss with Newman’s Own Garlic Vinaigrette & Marinade. Serve with additional vinaigrette if desired.
