2 pounds pork tenderloin
2 garlic cloves, slivered
One jar Newman's Own® All Natural Bandito Chunky Peach Salsa
2 tsp soy sauce
2 medium onions, thinly sliced
2 tsp butter
2 cups arugula
6 sub sandwich rolls
6 tsp Newman's Own® Family Recipe Italian dressing
Preheat oven to 375°F. Put pork tenderloin in baking dish which has been sprayed with cooking spray. Cut small slits in meat and push in garlic pieces.
Mix together 1 cup salsa and soy sauce and pour over meat. Cover pan loosely with foil and bake for about 45 minutes, until meat is no longer pink in middle. While meat is cooking, heat butter in medium skillet, add onions and cook over medium-low heat until onions are softened and golden brown. Cut rolls in half and drizzle salad dressing. Grill until browned.
Remove from oven and let rest for 10 minutes, then slice thinly. Stir remaining salsa in jar with pan juices and spoon over meat.
To assemble: spread onions on bottom half of roll, then meat. Top with arugula and top half of roll.
