1 pound of crabmeat
2 tsp chopped cilantro
1 Tbsp lime juice
1 Tbsp extra virgin olive oil
1/2 tsp Tabasco sauce
salt and freshly ground pepper to taste
4 medium size tomatoes, thinly sliced
1 small head of Boston lettuce
Italian bread, enough for 4 sandwiches
1 bunch fresh spinach
1 cup fresh parsley leaves
1/2 cup grated parmesan cheese
1/2 cup chopped walnut pieces
6 cloves fresh garlic
1 Tbsp dried tarragon leaves
1 tsp dried basil leaves
1 tsp salt
1/2 tsp fresh ground pepper
1/2 cup Newman's Own® Creamy Caesar Dressing
In a medium bowl combine crabmeat, cilantro, green onion, lime juice, olive oil, Tabasco, and salt and pepper. Gently mix ingredients together. Set aside.
Place spinach, parsley, parmesan, walnuts, garlic, tarragon, basil, salt and pepper in a blender or food processor. Mix until smooth. With motor running, slowly add salad dressing.
Put 2 slices of bread on each of 4 plates; spread the spinach pesto on each piece. Add lettuce and tomatoes on all 8 pieces. Toss and drain crab mixture. Spoon crabmeat mixture on top and finish with remaining bread.
Use toothpicks to hold sandwich in place and serve.
