½ cup chopped onions
1 Tbsp olive oil
1 ½ cups cooked chopped chicken
½ cup chicken broth
Two cans cannellini beans with their liquid
½ tsp celery salt
1 tsp oregano
1 jar Newman's Own® All Natural Chunky Salsa (mild, medium, or hot) (1/2 cup for the chili, the rest for the garnish)
1 ½ cups shredded mozzarella cheese (1 cup for the chili, the rest for the garnish)
In a 2-quart saucepan, sauté the onion in the oil until translucent. Add the chopped chicken and mix thoroughly. Stir in the chicken broth, cannellini beans and their liquid, celery salt, oregano, and ½ cup of the salsa.
Simmer over medium heat for 10 minutes, stirring occasionally. Be careful not to break up the beans.
Just before serving, stir in 1 cup of the mozzarella cheese. Serve in individual bowls, garnished with the remaining mozzarella and salsa.
