2 pounds red onion
2 pounds banana peppers, stems and seeds removed
2 pounds shitake mushrooms
2 pounds yellow squash
2 pounds zucchini
2 pounds broccoli florets
1 pound angel hair pasta
1 pound peeled and de-veined shrimp
1 cup Newman's Own® Lite Italian Dressing
2 Tbsp fresh basil
2 Tbsp fresh oregano
Cut all vegetables into 1 inch pieces. Mix all together and steam until tender. Combine vegetables with salad dressing. Add fresh basil and oregano. Set aside to marinate.
Cook pasta according to package directions.
Saute shrimp in skillet for three minutes. Drain vegetables while cooking and divide pasta among plates.
Return vegetable to pan with shrimp very briefly, then spoon over pasta.
