Grilled Sesame Ginger Salmon & Couscous

Ingredients

  • 1-1/2 pounds fresh salmon
  • 1/2 pound fresh baby spinach
  • 1/2 cup Newman’s Own® Sesame Ginger Salad Dressing
  • 1 box plain instant couscous
  • 1/2 tsp Newman’s Own Organic Ground Ginger
  • 1-2 tsp cornstarch
  • 2 Tbsp Olive Oil
  • 1 tsp chopped garlic
  • Newman’s Own Coarse Ground Black Pepper
  • Newman’s Own Sea Salt Flakes

Directions

Mix 1/4 cup salad dressing, ground ginger and cornstarch. Add enough cornstarch to thicken to make a glaze for the salmon.

Place salmon in foil, cover with glaze. Fold foil tightly. Let marinate for 5 minutes. Grill on medium-high heat approximately 10 minutes, 5 minutes each side. Prepare couscous according to directions on box.

Heat olive oil in sauce pan. Add chopped garlic, pinch of salt, pepper and spinach. Cook spinach approximately 5 minutes until warm and wilted.

Divide couscous onto plates and spinach over couscous. Cut salmon into equal pieces and place on top. Drizzle remaining dressing (heated) over salmon as desired.
