1 can prepared pizza dough, room temperature
1-2 tablespoons olive oil
2 small red peppers. thinly sliced
1 jar of Newman's Own® Bandito Salsa, mild or medium
2/3 cup canned black beans, drained
2 Tbsp fresh cilantro, coarsely chopped
2/3 cup cheddar cheese, shredded
1 1/2 cups pepper jack cheese, shredded
Preheat oven to 400° F. Stretch pizza dough into an oiled 17 x 13” (or similar size) pizza pan, leaving 1/2'-3/4' of pan free on each side.
Heat olive oil in skillet. Add red peppers and sauté on medium heat until softened, about 8 minutes. Sprinkle with salt to taste. Remove skillet from heat and cool peppers.
Using a large spoon, spread salsa on dough in pizza pan, leaving 1 inch exposed all around dough edges. Layer red peppers evenly on top of salsa. Sprinkle black beans and cilantro on top of pepper slices. Combine cheddar and pepper jack cheese and layer over sauce and toppings.
Bake in oven for 12-15 minutes or until crust turns golden brown.
