1 bag Newman's Own® Natural Flavor or 94% Fat Free Microwave Popcorn
2 cups chopped dried apricots
1 cup quick-cooking (not instant) oats
1 cup brown sugar
8 Tbsp unsalted butter or margarine
½ cup light corn syrup
Butter a large roasting pan or bowl. Pop the popcorn according to the package instructions. You should have about 10 cups. Pour the popcorn into the prepared pan. Stir in the apricots and oats.
In a 2-quart saucepan over medium heat, combine the brown sugar, butter and corn syrup, stirring constantly. Continue cooking and stirring until the mixture reaches 290°F on a candy thermometer. Pour over the popcorn mixture and stir until the popcorn is evenly coated.
When the mixture is cool enough to handle, form it into balls. Cool completely and store in an airtight container.
