½ cup Newman's Own® Lite Light Italian Salad Dressing
1/3 cup fresh lime juice
1/3 cup grated fresh ginger
¼ cup pure maple syrup
2- ½ Tbsp soy sauce
1 Tbsp fresh grated lime peel
½ pound sea scallops
½ pound large shrimp, cleaned and deveined
12 (8') bamboo skewers, soaked in water for 15 minutes
Place a large zipper seal plastic bag into a large, shallow dish. Into the bag, add dressing, lime juice, ginger, syrup, soy sauce, and lime peel. Seal bag. Massage gently to combine ingredients.
Add scallops and shrimp to bag and seal. Marinate in the refrigerator for 15 minutes.
Remove scallops and shrimp, discarding the marinade. On skewers, alternately thread scallops and shrimp with cherry tomatoes.
Grill or broil over medium heat until cooked or opaque, about 5 minutes, turning kabobs to cook all sides.
