2 pounds soft, Mexican chorizo, casing removed
1 red bell pepper, diced
1 onion, diced
1 jar Newman’s Own® Sockarooni Sauce
1 cup frozen corn
2 Tbsp cumin
1 Tbsp chipotle chili powder
In a medium saucepan, brown chorizo for two minutes. Add bell pepper and onion and cook for two more minutes.
Add corn, Sockarooni sauce, cumin, and chipotle powder. Cover and simmer for 25 minutes.
Top with cheddar cheese and serve!
