Ingredients

  • 1 tsp olive oil
  • 1/2 cup onion, chopped
  • 3 garlic cloves, minced
  • 1/4 cup fresh cilantro, diced
  • 1 jalapeño pepper, cored, seeded and diced
  • 2 tsp Newman’s Own Organic Ground Cumin
  • 1/4 tspNewman’s Own Ground Cayenne (optional)
  • 2 14-ounce cans diced tomatoes, no salt
  • 2 Tbsp tomato paste
  • 1/4 cup lemon juice
  • 4 cups low sodium chicken broth
  • ½ cup water
  • 1 ½ cups Newman’s Own® Medium Chunky Salsa
  • 3 cups cooked chicken breast, shredded or chopped

Directions

In a large pot, heat oil over medium-high heat. Add onions and cook until softened, about 3 minutes. Add garlic, jalapeño and cilantro and cook 2 more minutes. Season with cumin and cayenne pepper.

Add tomatoes, tomato paste, salsa, lemon juice, chicken broth, water and simmer soup for 20 minutes.

Add shredded chicken to the soup and cook 10 minutes more.

Serve soup with whole wheat crackers. Added shredded cheese, avocado chunks and/or fresh cilantro is optional.
