3 chicken breasts, cut into ½inch pieces
1 onion, chopped
1 green pepper, chopped
2 Tbsp olive oil
¾ cup Newman’s Own® All-Natural Bandito Salsa Medium
2 cups cheese, grated
In a saucepan over medium heat, sauté onions and green peppers in olive oil until soft, about 10 minutes. Add chicken pieces and cook until there is no longer any pink, about 5 minutes.
Add salsa and mix well.
Layer half the chips, half the chicken mixture, and half the cheese in a 9 x 13-inch pan. Repeat pattern with remaining chips, chicken and cheese.
Place in broiler until brown and bubbly, then serve.
