2 pounds skinless, boneless chicken breasts, cut into 2-inch cubes or pieces
1 cup Newman's Own® Olive Oil and Vinegar Salad Dressing or Lite Italian Salad Dressing
2 tsp fresh gingerroot, ground into a paste
2 tsp garlic paste
¾ tsp or less cayenne pepper
Place the chicken in a glass dish or nonreactive bowl. Mix the marinade ingredients together and pour over the chicken. Cover and refrigerate for at least 2 hours or overnight, turning occasionally.
Remove the chicken from the marinade and thread on 12 soaked wooden skewers.
Preheat the grill. When ready to serve, grill or broil the skewers for about 5 minutes per side. Arrange the cooked chicken skewers attractively on a platter and serve.
