¼ cup olive oil
4 cloves garlic, minced
1 medium onion, diced
4 cups water
2 chicken flavored bouillon cubes
3 celery stalks, diced
1 medium potato, peeled and diced
2 carrots, diced
1 large can black beans, rinsed and drained
2 cups canned corn, with juice
1 cup rice or orzo
¼ cup fresh cilantro, minced
1 jar Newman's Own® Bandito Salsa (medium or hot), or 1 ½ cups Newman's Own® Fra Diavolo Pasta Sauce
Heat oil and sauté garlic and onion until onion is translucent. Add water, and bouillon cubes, and bring to a boil.
Reduce heat to medium-high; add celery, potato, carrots, beans, corn, rice or pasta, and cilantro.
Stir in salsa or pasta sauce, and simmer until rice or pasta and vegetables are cooked, about 30 minutes.
