1 onion, diced
2 carrots, diced
4 stalks celery, diced
1 bell pepper, diced
3 Tbsp extra virgin olive oil
2 cans black beans, drained and rinsed
2 jars Newman’s Own® Sockarooni Sauce
3 cups water
2 Tbsp cilantro, chopped
1 Tbsp cumin
salt and pepper
1 avocado, diced
1 lime, sliced
8 cilantro sprigs for garnish
In a large saucepan over medium heat, sauté onion, carrots, celery, and bell pepper in olive oil until translucent and soft.
Add black beans, water, Sockarooni sauce, cilantro, cumin, salt and pepper. Cover and simmer for 45 minutes.
Serve hot and garnish with avocado, lime, and cilantro.
