Double Stack Portobello Burger

Enjoy this fresh and healthy meal as an alternative to beef burgers.



4 Portobello mushroom caps
2 ½ cups Newman’s Own® Olive Oil & Vinegar salad dressing
4 Tbsp blue cheese, crumbled
4 tomato slices
4 lettuce leaves
4 pieces Focaccia, sliced in half
4 Tbsp mayonnaise
1 papaya, chopped
2 tomatoes, quartered
2 Tbsp basil, julienned
½ red onion, diced


  • Marinate mushrooms in 2 cups Newman’s Own® dressing for up to 8 hours. Grill on a grill pan over medium heat until tender.

  • To construct burgers, place mushroom on one half the focaccia and top with blue cheese, mayonnaise, tomato slice, lettuce, and the other half of bread.

  • To make the salad, combine papaya, tomato, onion, and ½ cup dressing. Mix thoroughly and serve immediately.
