Scallop Ceviche w/ Watermelon & Cucumber

1 pound of very fresh sea scallops
1 cup diced, seeded watermelon
½ cup seedless cucumber, julienne style
½ cup Newman's Own® Lighten Up Light Lime Vinaigrette
¼ cup orange juice
juice of two limes
¼ cup fresh cilantro
1 Tbsp chopped mint
1 tsp ground cumin
1 Tbsp chopped jalapeno
½ tsp kosher salt
½ tsp cracked black pepper


  • In a stainless steel or a glass bowl combine salad dressing, orange and lime juice, cilantro and mint along with the cumin, jalapenos, salt and pepper. Whisk to combine. Keep well chilled.

  • Slice fresh scallops into 3 pieces (like coins). Gently toss in dressing mixture and marinate in refrigerator for 2 hours. Drain half the liquid out of the bowl, and toss in the watermelon and cucumber.

  • Serve as cold as possible with baked tortilla chips.
